Fresh garden Thai-curry

Ingredients Serves: 4

  • 1 big bunch pea shoots (Closed loop farm)

  • Few basil leaves (Closed loop farm)

  • 1 garlic, finely diced (Closed loop farm)

  • 1 onion, finely chopped (Closed loop farm)

  • 1 tablespoon sugar

  • 2 tablespoon oil or butter

  • 2 tablespoon Thai red curry paste

  • 1 tin (400ml) of coconut milk

  • 8 cherry tomatoes, cut half (Closed loop farm)

  • Sliced mushrooms or salmon or chicken

Preparation:5min â€ș Cook:10min â€ș Ready in:15min

  1. Heat oil over medium high heat, wait until it's hot, and then add garlic and onion. Stir until onion is translucent, then add Thai curry paste, followed by mushroom/fish/chicken.

  2. Stir until mushroom/fish/chicken is fully cooked.

  3. Add coconut milk, sugar and pea shoots.

  4. Garnish with a sliced tomatoes and basil.

  5. Serve with rice or noodle.
